Easy Vegan Mixed Berry Baked Oatmeal
Gooey and bubbling berries are baked into a soft and warm baked oatmeal. This is an easy and nutritious breakfast that is also insanely delicious!
Ingredients
- 1 cup almond milk
- ½ cup maple syrup
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ¼ cup melted vegan butter
- 1 teaspoon baking powder
- 2 cup quick oats
- 1 cup fresh or frozen wild blueberries
- 1 cup freshly diced strawberries
Vegan Icing
- ½ cup powdered sugar
- 1 teaspoon softened vegan butter
- 1 teaspoon vanilla
- 1 tablespoon almond milk
Instructions
- Preheat Oven to 350
- Mix together the almond milk, maple syrup, baking powder, vanilla, and butter.
- Add the oats and mix. Then, fold in the berries. Pour the batter into a 9x11 casserole dish and bake for 45 minutes. While baking, whisk together icing ingredients. Oats will be golden and berries will be bubbly.
