Simple Lobster Roll

A few years ago while vacationing in the Hamptons I finally got up the nerve (and the bank) to make my own lobster rolls. After the revolution hit all the NYC restaurants we craved them constantly especially at the beach. Plus they seemed easy enough to make and guess what, they are! Try them out for lunch on a hot summer day alongside a ice cold beer – yum!

Ingredients:
(Makes four servings)

1/2 lb fresh lobster meat
3 scallions, chopped
1 tsp mayonnaise
1/2 lemon, squeezed
Salt and freshly ground pepper
Butter
4 potato rolls hot dog rolls

Directions:

Cut the lobster meat into bite sized chunks and toss with the chopped scallions. Add the mayonnaise, fresh lemon juice and toss to coat. Season to taste with salt and pepper. Heat a saute pan on medium and melt butter. Toast the inside of each hot dog roll until lightly browned. Fill with lobster salad and serve immediately.

Best Banana Bread

I normally don’t do a lot of baking, but banana bread is a favorite of mine to make. It allows you to use up ripe bananas and it doesn’t require lugging out the mixer. Plus for a baked treat, it’s on the healthier side; using mini chocolate chips gives you a bigger chocolate bang for your buck since they distribute well, a portion of the flour is whole wheat, and after all, its bananas! Make a loaf for your family or try using mini loaf pans and give them out to friends.

Ingredients:

(Makes 1 loaf or 3 mini loaves)

2 eggs
1/2 cup canola oil
1/2 cup sugar
1 tsp vanilla extract
3 ripe bananas, mashed
3/4 cup flour
1/2 cup whole wheat flour
1 tsp baking soda
1/2 cup chopped walnuts
1/2 cup mini chocolate chips
Cooking spray

Direction:

Preheat oven to 350 degrees. Combine eggs, canola oil, sugar and vanilla extract in a large bowl and beat until creamy. Add the mashed bananas and blend well. Add flour, whole wheat flour, baking soda, chopped walnuts and mini chocolate chips and stir well. Spray a loaf pan with cooking spray. Pour mixture into pan and bake in the oven for 45-50 minutes or until toothpick inserted into the center comes out clean.

Notes:

Before you add the chopped walnuts and mini chocolate chips, toss them with a little flour so they don’t sink to the bottom of the loaf. Also, if you are using 3 mini loaf pans, bake in the oven for 25-30 minutes.

Love love love my new olive oil!! It was my birthday this past week and my best friend dropped off the best gift ever, a beautiful bottle of fabulous olive oil! Even though I preach to use quality ingredients in the kitchen I haven’t really dived into the wonderful world of evoo…until now! It’s so rich and flavorful I could almost drink it and it has given some of my favorite dishes an added layer of  complexity. So often we buy gifts for others without a second thought but when it comes to spoiling ourselves it doesn’t happen. Grilled Pork Tenderloin – The Other Barbecue Meat

Being that it is our first summer living in the suburbs, our grilling aspirations were high. Unfortunately by mid June we were overdosed on burgers and my waistline was starting to resemble a hot dog. Fish worked well for a while but left us craving something a little more substantial – enter pork tenderloin. Healthy, affordable and fabulous on the grill. Try it out!

Ingredients:

(Makes four servings)

1 whole pork tenderloin, approximately 1 lb

1 tsp dried thyme

1 tsp dried rosemary

Salt

Freshly ground pepper

2 garlic cloves, minced

Olive oil

Directions:

Season pork tenderloin liberally with thyme, rosemary, salt and pepper. Place it in a ziplock bag, add the minced garlic and coat with olive oil. Marinate the pork overnight in the refrigerator or for at least one hour. Allow to sit at room temperature while preparing the grill. Preheat grill to medium high. Grill pork tenderloin 5-6 minutes on each side for a total of 25-30 minutes until nicely charred. Allow to rest for 5 minutes, slice and serve on a platter with fresh rosemary and thyme.
